This isn't my holiday and my opinions don't count. If they didn't count this is how I would do Ernesta Week.
Monday: Cottage Cheese and Pineapple.
Tuesday: Grilled Chicken Salad.
Wednesday: Stir Fry.
Thursday: Zucchini, Squash, Onions and Tomatoes with Cottage Cheese.
Friday: Pizza. 'Cause pizza and Fridays do go together.
You know just something with some color, some freshness.

Your opinion does count. We would all be much healthier if we followed your advice. One problem....I will gag if I attempt to eat cottage cheese.
