Sunshine makes me happy.
I'm so tired of school.
I'm not sure if green is my favorite color anymore.

I like antique glass doorknobs.
Before I die I will get Adrian to like onions. No, love them.
Our fridge has too many sticky note reminders on it.
I wish I knew how to sew better. Practice I guess.
I liked the movie Avatar even though lots of people don't.
I haven't eaten a banana in a long time.
My tulips are peaking through.

So While I was talking to Troll.

Like I said earlier, I got a call from the ward secretary to meet with the bishop. Yep you guessed it, I'm a Relief Society Teacher again. While I lived at Snowview I was a a Sunday School teacher and a Relief Society teacher twice. I'm not quite sure what Heavenly Father is trying to do with my nervous system! But ah, I guess my first lesson in our new ward went ok. Probably because I have some of my mom's genes, giving me the ability to crack jokes when I'm nervous. Only bad things is I had to wring out my shirt, no big deal.

Today:
The ward secretary called me while I was in Idaho Falls at a tattoo parlor asking me if I could meet with the Bishop tomorrow morning. Awkward!

Fact:
Adrian and I got to go to church at 9:30 today. I've never been at church and in Rexburg at 9:30 before. I like it. I couldn't remember what people do on Sunday when they're done with church by noon? We got used to walking out of church in the dark, quickly figuring something out for dinner, and then going to bed. But today, we ate manicotti for lunch. Adrian read. I "rested my eyes". Ate brownies together. It was great. Never going back to 1:30 church as long as I'm in Rexburg!
Chicken, Cheese + Spinach Manicotti
1-1/2 cups finely chopped cooked chicken breasts
2 cloves garlic, minced
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 container (16 oz.) Cottage Cheese
2 egg whites
1 cup Shredded Mozzarella Cheese
10 manicotti shells, cooked, drained
1-1/2 cups spaghetti sauce
1/4 cup chopped fresh basil
HEAT oven to 350°F.
COMBINE chicken and garlic in large bowl. Add spinach, cottage cheese, egg whites and 1/4 cup mozzarella; spoon into manicotti shells.
PLACE in 13x9-inch baking dish sprayed with cooking spray. Cover with spaghetti sauce.
BAKE 25 to 30 min. or until heated through. Top with remaining mozzarella; bake 5 min. or until melted. Sprinkle with basil.
This was really quick and easy. And good!
